Whole sides of hebridean smoked salmon make an ideal centrepiece for a dinner party. These served at Skibo Castle.

The only thing done to our oak smoked salmon sides before vacuum packing is to take out all the bones, leaving the pellicle intact keeping the flavour and succulence in. It is easy to slice thin pieces of salmon from the side as and when you need them.
